1 pound skinless, boneless chicken breast halves
1 (10 ounce) can diced green chile peppers
4 (14 ounce) packages shredded Cheddar cheese
1 large onion, diced
1 tablespoon minced fresh ginger root
1 lime, juiced
2 jalapeno peppers, seeded and minced
4 medium tomatoes, diced
Place chicken in a large resealable plastic bag in the freezer. Remove bag and place into a large bowl to cool.
In a medium bowl, mix the peppers, cheese, onion, ginger, lime juice and jam.
