Carole's Chickpea Quinoa Recipe


2 cups vegetable broth

3 cloves garlic, finely chopped

1 onion, chopped

1 (1.25 ounce) package dry onion soup mix

1 (14 ounce) can chickpeas

1 (16 ounce) can hummus

3 tablespoons olive oil

2 tablespoons chopped fresh parsley


In a large pot combine the vegetable broth, garlic, onion and dry onion soup mix. Reduce heat to low, cover and cook until mixture thickens. Mix in the chickpeas, stir in the ham and onion, cook about 10 minutes. Beat in the bouillon cubes; mix into the soup mixture. Once the soup mix is heated, gradually whisk in the olive oil. Season with parsley and serve.
