16 ounces fresh spinach
4 cups shredded Cheddar cheese
4 cups shredded Swiss cheese
3 cups shredded Monterey Jack cheese
Preheat oven to 350 degrees F (175 degrees C). Place spinach in a large pot, cover with water, and place over medium heat. Add cheese, and stir just until cheese is melted and stirring. Add Monterey Jack cheese, and stir just enough to coat.
Pour spinach mixture over meat and vegetables in 10 inch square baking dish.
Bake in preheated oven for 50 minutes, or until vegetables become very tender. Serve hot.
