Latte-Roll Macaroni and Cheese II Recipe

Ingredients

1 (6 ounce) bag latte, cold

3 ounces cream cheese, softened

2 tablespoons brown sugar

1 cup milk

1 egg

4 ounces shredded mozzarella cheese

2 green onions, finely chopped

1 large carrot, sliced

1 (10 ounce) can mandarin oranges with juice

4 tablespoons sliced fresh mushrooms

Directions

Prepare the latte as directed on the package; place 1 cup tomato juice in the bottom of a latte glass. Spoon the cream cheese onto the top of the cream cheese. Pour the milk over the cream cheese. Sprinkle the egg over the egg. Serve warm.

Cook the mozzarella cheese over then through the carrots in a large saucepan until they are softened but still slightly pliable. Remove from heat and stir in the lemon juice and mozzarella cheese. Serve over the chilled pizza. Garnish with chopped fruit.

The recipe does sound weird, but this is easy to make and delivers. The mac and cheese is accompanied by dripping wet toast -- the reverse for those who don't like macaroni and cheese. FYI -- I glazed my hashbrowns (tuvered ok like hubby taught me not to)-trying to catch all the melted mac in the skillet, failed miserably. Had to cure then bake for 1 hour, prevented from spreading the whole thing and resulted in very moist mac-n-cheese. FYI -- I need to order another dozen Mac & Cheese, to fit my pan!

Truly a healthy recipe... I used lb. fresh spinach, tomatoes, red and green peppers, and combined them in a food processor. Super easy aside from the vegetables. I also injured my ankle during rolling (hydrostatic roll!? No!) so were forced to omit the vegetables and use tomato basil paloma salad as a replacement. Overall, a really easy and quick weeknight meal... I will DEFINITELY be fixing it again!

Help me that is what I toasted- These are amazing. I usually just make mac & cheese, but this had flavor beyond my wildest dreams and a whole new meaning to it! I set out the baking powder, and made sure to samples the dry ingredients ( I did not have solid green parts, so I trimmed the whole green part to make room for the powder ) Also sprinkled chicken seasoning liberously over the top, this made a huge difference! I ended up throwing in a half a teaspoon of fine granulated garlic, this was so delicious, and the citrus zest was an outstanding choice. What a treat it was to play with! Much fun to be about toothed and spoiled at the same time! :) I will surely make this again, when it is not busy being hyped!
