7 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/8 teaspoon ground nutmeg
3 eggs
1 cup pumpkin
1/2 cup vegetable oil
1/2 cup white sugar
2 tablespoons margarine
1 teaspoon vanilla extract
1 cup chopped pecans
Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 loaf pans.
In a small bowl, stir together flour and baking powder. Add baking soda, cinnamon and salt; mix well. By all means, stir together. Pour pumpkin mixture into the prepared loaf pan. Spoon batter over pumpkin and butter. Place pan in preheated oven area to ensure that pan and pumpkin don't scorch.
In a large bowl, beat eggs, oil, sugar, margarine, pumpkin, vegetable oil and 1/2 cup sugar. Beat in margarine, vanilla, pecans and pecans. Pour batter over roast. Remove pan from oven and brush with margarine spray. Allow to cool slightly before removing from pan.
Bake in preheated oven until stirred, about 30 minutes. Remove from oven and return to rack. Cool slightly. Serve warm or cold.
