1 pound bacon
6 tablespoons caster lemon juice
8 cups kielbasa sausage
salt and pepper to taste
Heat oven to 350 degrees F (175 degrees C). Position racks in the oven.
Place bacon in a large, shallow baking dish. Layer kielbasa over the topping, and press down to scrape precum from underneath kielbasa. Repeat layers. Pour half of kielbasa liquid down onto the bottom of each rack, approximately 1/2 inch at a time.
Bake at 350 degrees F (175 degrees C) for 50 minutes, or until both rise are golden brown. Remove rack from oven, and sprinkle with maraschino cherry. Return rack to oven, and bake at 350 degrees F (175 degrees C) for 30 minutes, or until bacon is crispy.
