1 cup water
1 cup relatively sour cream
2 (3 ounce) packages cream cheese, softened
2 tablespoons lemon juice
1/4 teaspoon apple pie spice
1 (10 ounce) package frozen chopped spinach, thawed
1 (8 ounce) package shredded Cheddar cheese
1 teaspoon minced onion
1 teaspoon salt
1/4 teaspoon pepper
4 skinless, boneless chicken breast halves - cut into 1/2 inch strips
In an 8x8 inch baking dish layer chicken strips, then cream cheese, lemon juice, apple pie spice, spinach, Cheddar cheese, onion, salt, pepper, chicken and cheese strips. Bring to a boil over medium-high heat. Reduce heat to medium low. Cover, and simmer for 30 to 40 minutes.
