Raisin Gingerbread Recipe

Ingredients

1 cup milk

1 egg

1 cup raisins

2 cups all-purpose flour

2 teaspoons baking soda

½ teaspoon baking powder

1 pinch salt

1 cup white sugar

2 tablespoons raisins

6 tablespoons butter, softened

1/2 cup wheat flour

1 teaspoon baking powder

1 teaspoon vanilla extract

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.

In a large bowl, mix milk, egg, raisins, flour, baking soda, baking powder, salt and sugar. Stir well and pour into cookie sheets.

Bake for 8 to 10 minutes in the preheated oven, until they are light brown. Cool completely.

Spread butter/white wheat mixture over cooled cookie sheets. Cover and spray with vegetable oil spray. Spread raisin mixture over butter mixture. Bake at 350 degrees F (175 degrees C) for 10 minutes, or until firm. Remove from cookie sheets to wire rack to cool completely.

While cookies are on the rack, stir together 1/2 cup raisins, 1 tablespoon butter and 1 cup flour together. Put 2 teaspoons raisins over each cookie. Place over the raisin mixture. Return cookies to the rack, and bake for an additional 10 minutes. Cool completely.

When cookies are cool, sprinkle raisin mixture over the top of the cookies. Cut into 1 inch square slices. Serve warm.
