1/4 cup butter
1/2 cup packed brown sugar
1/2 cup white sugar
2 eggs
2 teaspoons vanilla extract
2 teaspoons almond extract
1 teaspoon lemon juice
1 teaspoon vanilla extract
1 teaspoon hot water
1 teaspoon white sugar
1 teaspoon baking soda
1/2 cup miniature marshmallows
Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets.
In a large bowl, cream together the butter, brown sugar and white sugar until smooth. Beat in the eggs, one at a time, mixing well after each addition. Combine the brown sugar mixture with the white sugar mixture alternately with the lemon extract, lemon juice and vanilla. Mix until thoroughly combined. Fold in marshmallows. Drop cookie sheets onto the cookie sheets.
Bake for 12 to 13 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
