1 (9 inch) unbaked deep dish pastry
3 cups white sugar
3 eggs, beaten
1/4 cup butter
1 cup milk
3/4 cup white sugar
1 cup light corn syrup
Preheat oven to 350 degrees F (175 degrees C).
Beat and coarsely chop sugar and butter; stir in milk and corn syrup. Spread into bottom of pastry shell. In a medium bowl, beat egg yolks until thick and light. Stir in 1 cup of the corn syrup and remaining 1 cup of sugar. Pour over pastry and spread to cover.
Bake in preheated oven until golden and bubbly, about 40 minutes. Immediately invert onto a tumbler filled with boiling water to let sugar drip off for 1 minute. Return to platter.
