1 cup watermelon rind
1 tablespoon vegetable oil
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
1 cup water
Heat vegetable oil in a medium saucepan over a medium heat. Place watermelon rind, oil, cinnamon, salt and watermelon in pan and cook over medium heat until the watermelon turns yellow and is tender. Remove from heat and cool.
