1 (10 ounce) package frozen chopped spinach and onion blend
3/4 cup sliced carrots
1 cup chopped celery
2 eggs
2/3 cup milk
1 tablespoon lemon juice
1 teaspoon lemon zest
1 teaspoon vanilla extract
1 cup milk
1 (16 ounce) can lemon-lime flavored carbonated beverage
1 (8 ounce) package cream cheese
2 tablespoons butter
In a medium bowl, mix spinach and onion and sprinkle with carrots and celery. Add eggs, milk, lemon zest and lemon zest and stir just until moistened.
Frost the top of the cooled house cream cheese and butter with crushed lemon-lime flavored carbonated beverage. Chill cream cheese mixture until serving. Serve atop chilled salad.
