1 tablespoon vegetable oil
1 teaspoon Italian seasoning
1 cup chopped onion
1 cup butter, melted
5 skinless, boneless chicken breast halves
4 slices cheese
1/2 cup chopped celery
2 tablespoons paprika
Heat oil in medium saucepan over medium heat. Stir in Italian seasoning, then cook, stirring constantly, for 10 minutes. Remove chicken and brown on all sides. Stir in the melted butter. Cook, stirring constantly, for 5 minutes. Remove chicken from pan and set aside.
Heat butter or margarine in medium skillet over medium heat. Cook chicken in butter mixture until it begins to brown.
Stir chicken into soft bread slices. Spread pieces in a single layer on a medium baking sheet. Top with cheese. Arrange celery slices over chicken, then sandwich celery and chicken over cheese. Cover and refrigerate at least 4 hours.
