1 1/2 cups white sugar
1 1/2 teaspoons baking soda
2 eggs
2 teaspoons vanilla extract
2 1/2 cups applesauce
1 1/2 cups brown sugar
1 teaspoon salt
1 teaspoon vanilla extract
1 cup chopped celery
1 cup chopped pecans
In a large bowl, mix together the sugar, baking soda, eggs, vanilla extract, applesauce and brown sugar. Mix with a pastry blender and cut into 1 inch squares. Put ones in the middle of large muffin tins at 10x15 inch.
Bake muffins in preheated oven for 30 to 35 minutes, replacing tin with pans as necessary, until browned. Cool muffins first in pan on a wire rack.
