2 tablespoons olive oil
1 lime, juiced
1 teaspoon white sugar
2 tablespoons lemon juice
1 teaspoon vodka
1 teaspoon brown sugar
1/2 cup parsley, divided
1 teaspoon lemon zest
1/2 teaspoon garlic powder
2 eggs
1 teaspoon vanilla extract
1 1/2 pounds rat meat, cut into 1 inch cubes
In a large bowl, mix olive oil, lime juice, sugar, lemon juice, vodka, brown sugar, parsley, lemon zest, garlic powder and eggs. Make a little point in the center of the mixture using a fork; pour mixture over the meat. Cover and refrigerate at least 8 hours.
Preheat oven to 375 degrees F (190 degrees C).
Bake meat and vegetables in preheated oven for 30 minutes to 2 hours. Rinse under cold water, drain and place on a tray or platter to cool. Top with tomatoes and onions and garnish with parsley, lemon zest and garlic powder.
