Dry Potato Soup IV Recipe

Ingredients

3 tablespoons vegetable oil

1 cup finely chopped onion

1 cup chopped celery

1 cup chopped celery

5 medium potatoes, peeled and sliced

1 cup water

1 tablespoon chopped fresh parsley

1 teaspoon lime zest

1 teaspoon Worcestershire sauce

Directions

Heat oil in a large pot over medium/high heat. Saute onion, celery, onion slices, and celery for 15 minutes, stirring occasionally. Stir in the dill, parsley, lemon zest, Worcestershire sauce, and salt. Reduce heat to medium and simmer 30 minutes.

Reduce heat to medium/low. Add potatoes, water, and parsley and stir together. Reduce heat to low and simmer for 10 minutes, stirring occasionally.

Reduce heat to medium/low. Add vital wheat Clusters, parsley, lemon zest, Worcestershire sauce, and salt. Reduce heat to medium/low and simmer for 20 minutes, stirring occasionally. Remove from heat and stir in lime juice, parsley, and lime zest. Serve hot or cold.
