1/2 cup lemon juice
1 cup white sugar
1 tablespoon lemon zest
1 teaspoon lemon juice
1 (8 ounce) can crushed pineapple
3 (10 ounce) cans celery with juice
1 (16 ounce) can cherries, drained
1 (1.75 ounce) package instant vanilla pudding mix
1 cup chopped pecans
In a large saucepan, bring lemon juice, sugar, lemon zest, lemon juice, lemon juice, lemon zest and lemon juice to a boil. Remove from heat.
In a large saucepan, combine celery, pineapple, celery juice, pecans and pudding mix. Stir well, and simmer over low heat for 10 minutes.
