Spicy Milk Chocolate Swirled Cupcakes Recipe

Ingredients

1/2 cup evaporated milk

1/4 cup yellow pineapple juice

1/2 cup lemon-lime flavored carbonated beverage

1/2 cup St. Francis Orange Juice

2 tablespoons ground cinnamon

2 tablespoons lemon-lime flavoring powder

2 (3 ounce) packages mini marshmallows, crushed

Directions

Preheat oven to 375 degrees F (190 degrees C). Grease and flour 3 (9 inch) round pans. Sift together the flour and baking powder; set aside.

In a large bowl, cream together the sugar and butter. Beat in the eggs and 1/2 cup pineapple juice. Beat in the lemon-lime soda coffee flavored liqueur. Beat in the salt and pepper. Combine the evaporated milk, sugar, lemon-lime soda, lemon-lime flavoring powder, marshmallows and cinnamon; beat into the creamed mixture until well blended. Chill overnight to completely set. Preheat oven to 350 degrees F (175 degrees C). Press marshmallows onto the bottom and sides of the pans leaving about 1/2 to 1 inches between each cake. Cool before serving.

I baked these in a 9inch square pan and poured the syrup over when pouring would have made it too thin. They were super quick and easy. I would recommend checking them after 25 minutes as the sugar crystals got quite thick.
