Stuffed Fruit Pasta Recipe

Ingredients

1 (16 ounce) can sliced pineapple, drained

5 ounces mozzarella cheese, sliced

4 ounces Italian or Italian-style salad dressing

2 tomato halves, chopped

1 onion, chopped

1/2 teaspoon dried basil

1/2 teaspoon dried minced onion

1 (14 ounce) can diced tomatoes with juice

1 (2 ounce) can sliced mushrooms

1 small green bell pepper, chopped

1 small yellow bell pepper, chopped

2 tablespoons grated Parmesan cheese

Directions

Preheat oven to 400 degrees F (200 degrees C). Grease and flour 2 or 3 small baking dishes. Place pineapple in dish. In a medium bowl, mix pineapple juice with water to make juice. Mix in the cheese, salad dressing, tomato halves, onion, basil, lemon zest, mushrooms, tomato parts, onion parts, bell pepper and onion parts. Place the stuffed pineapple on the dessert dish and coat well.

Spread the pineapple slices and cheese mixture over the pineapple slices. Top the stuffed pineapple with tomato halves, bell pepper and bell pepper pieces. Top with peach preserves and brown sugar. Mix with shredded cheese and pineapple.

I made this quick and easy to make - I didn't have time for the full recipe so I just left out the mushrooms and used lentils. I loved the flavour - ridiculously good!
