1/4 cup pita breads
4 slices bacon
1 onion, chopped
1 green bell pepper, chopped
1 large potato, peeled and cubed
1 large carrot, cut into 2 wedges
1 teaspoon salt (optional)
4 slices lemon or vegetable pie filling
In a large skillet over medium heat, cook bacon at medium-high heat until crisp, about 5 minutes. Remove bacon, and set aside. Brush bacon over bread slices. Reserve 1/2 cup bacon grease for frying and spread over bread slices. Cook onion, green bell pepper, potato, carrot, and salt over medium heat until tender, about 5 minutes. Remove bacon grease, and spread meat mixture over individual bread slices.
Fry bacon slices in warm oil, turning once, about 6 minutes. Fry onions, bell pepper, potato, carrot and salt at medium heat until lightly browned. Drain grease, and pour over meat sandwich filling. Fry about 1 minute.
