Power Taco Recipe

Ingredients

2 teaspoons vegetable oil

2 pounds ground beef

1 red bell pepper, seeded and diced

1 pound potatoes, peeled and cubed

1 onion, thinly sliced

1 (16 ounce) can refried beans

1 (2 ounce) package taco seasoning mix

Directions

Heat oil in small oil pan over medium heat. In a mixing bowl, combine ground beef, red pepper and potatoes. Stirring well, brown beef until no longer pink. Slice peppers into 1/4 inch slices. Remove from boiling and discard. Stir into beef mixture. Add salt and pepper. Return pot to low heat and stir thoroughly.

Preheat oven to 350 degrees F. Lightly grease the inside of a 9x13 inch baking dish. Shape taco seasoning into fine powder that can be spread evenly over meat mixture. Place meat mixture over warm mixing pot; pour a teaspoon of marinade on top. Brush liberally with melted oil mixture.

Bake at 350 degrees F for 35 minutes, stirring occasionally. Remove the foil from pans and cool at room temperature for 2 hours before removing to foil. Preheat the oven 35 to 35 degrees F (18 to 24 degrees C).
