1 1/2 cups water
1/2 cup grape juice
1 teaspoon salt
1/4 teaspoon baking powder
1 cup cooked white rice
1/2 cup cooked chicken broth
1 1/2 cups uncooked green rice
1 (8 ounce) can frozen mixed vegetables
When boiling, bring water, grape juice, salt and baking powder to a boil. Stir in rice. Reduce heat and simmer 8 to 10 minutes, stirring occasionally.
Meanwhile, in a medium, nonstick skillet, saute chicken broth in boiling water until golden brown. Remove chicken, stir in mixed vegetables and cook, stirring, until heated through (medium heat).
