2 celery sticks
2 large carrots, diced
1 medium onion, diced
2 tablespoons curry powder
2 tablespoons sesame seeds
1/4 teaspoon ground ginger
2 tablespoons vegetable oil
1/4 cup water
1 (8 ounce) container fresh pineapple juice
1 clove garlic, minced
1 red bell pepper, diced
In a large pot, combine celery sticks, carrots, onion, curry powder, sesame seeds, ginger, oil, water, pineapple juice, garlic, bell pepper and pineapple. Bring to a boil over high heat, stirring continuously. Reduce heat to low, cover and simmer for about 5 minutes. Reduce heat to low, cover and simmer for about 30 minutes.
