1/2 cup finely chopped green onion
1 cup finely chopped cauliflower and broccoli
1 cup carrot juice
1 cup vegetable oil
2 tablespoons mincemeat
1 pinch ground nutmeg
1 cup chopped almonds
1 cup chopped walnuts
1 teaspoon grated lemon zest
1/4 cup cider vinegar
2 tablespoons powdered ginger
1/8 cup white sugar
1 teaspoon saffron extract
1 1/2 cups sliced almonds
Place green onions and cauliflower in a small bowl; drain.
In a medium saucepan, combine carrot juice, oil, mincemeat, nutmeg, almonds, walnuts, lemon zest, vinegar, ginger, sugar, and saffron. Bring to a slow boil over medium heat, stirring constantly.
Remove from heat; pour into a large bowl. Add water and ginger, stirring gently. Stir into the cauliflower mixture. Cover and refrigerate several hours.
Return filled container of chilled granola to refrigerated container; serve.
