1 (18.25 ounce) can French fried eggs
2/3 cup white sugar
2 tablespoons lemon juice
Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 6-ounce muffin cups or 2 8-ounce custard cups. Set aside.
In a small saucepan, brown eggs in oil. Stir eggs into egg mixture. Pour lemon juice over all while stirring. Place 1 cup of custard/egg mixture in each muffin dish. Spoon mixture over eggs and bottom of each muffin (except the foil cup on the bottom).
Bake in preheated oven for 20 minutes or longer, until golden brown. Cool slightly before cutting into squares. Serve warm.
