1 (10 ounce) package chewy frozen hash brown potatoes, thawed
8 ounces shredded Cheddar cheese
2 eggs
1 cup shredded Cheddar cheese
1/2 cup chopped onion
1 (1 ounce) package instant Italian-style creamer cheese spread
1 cup shredded mozzarella cheese
Place hash browns in a large plastic bag. Rub cheese on hash browns in microwave or in a medium bowl, or until cheese is melted. Heat oven to 350 degrees F (175 degrees C).
Place eggs in a large bowl or double boiler. Mix together cheese and onion; pour over hash browns. Layer hash browns with cheese mixture.
Sprinkle 1/4 cup of shredded cheese over hash browns. Lay remaining cheese mixture on top of hash browns.
Place hash browns in a 9x13 inch baking dish. Sprinkle remaining cheese mixture over hash browns.
Bake hash browns in preheated oven for 20 minutes.
