2 cups light brown sugar
1 1/2 cups boiling water
2 eggs
1 teaspoon vanilla extract
1 cup fresh fruit
1 pint vanilla wafers, crushed
1 cup margarine, melted
1 cup cold heavy cream
1 1/2 teaspoons pure vanilla extract
1 cup brandy
1 pint sliced almonds
Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9 inch round pie pans.
In a large bowl, mix brown sugar and boiling water. Stir in eggs, one at a time, beating well after each addition. Stir in vanilla, fruit, crushed fruit pieces, vanilla wafer crumbles, fruit pieces, margarine, applesauce, brandy and almonds. Pour mixture into prepared pans.
Bake in preheated oven for 45 minutes, or until a toothpick inserted into center of the pie comes out clean.
