7 slices white bread, torn into cubes
3 boneless, skinless chicken breast halves
2 cups shredded Cheddar cheese
1/2 cup shredded Monterey Jack cheese
2 tablespoons mayonnaise
2 tablespoons brown sugar
Preheat oven to 400 degrees F (200 degrees C). Divide the bread cubes into two pieces and repeat with the chicken and cheese, cooking as necessary.
Arrange chicken pieces in a single layer in a large resealable plastic bag, being mindful that they are large enough to bulge out. In a medium bowl, combine 2 cups shredded Cheddar cheese, Monterey Jack cheese, mayonnaise and brown sugar.
Carefully place bread cubes in 1-quart casserole dish; dish quickly. Place chicken in dish and pour melted cheese over all. Cover and refrigerate overnight.
