1 pound add frozen mixed vegetables
1 small onion, sliced
2 cups diced chopped red bell pepper
salt and pepper to taste
1/2 cup chicken broth
1/2 cup water
1 1/2 tablespoons distilled white vinegar
1/4 cup soy sauce
3/4 teaspoon red pepper flakes
Add vegetables and onion to butter a large pot approximately boil. Cook until vegetables are wilted, but still warm.
Add chicken, salt, pepper and broth to pot. Bring to a full boil; stir in vinegar, water and soy sauce. Heat for 20 minutes; reduce heat to medium. Stir fries until lightly browned on all sides. Serve at room temperature.
