1 (9 inch) unbaked pie crust
1 cup boiling water
1 cup white sugar
2 tablespoons brown sugar
1/3 cup yellow mustard
2 teaspoons lemon zest
6 egg yolks
2 tablespoons butter, melted
1 cup white sugar
1/2 cup butter, melted
1 cup milk
1 teaspoon lemon extract
1 (8 ounce) package cream cheese, softened
1/4 cup lemon juice
In a large bowl, combine boiling water, sugar, brown sugar, yellow mustard, lemon zest, egg yolks, butter, 1 cup white sugar, 1/2 cup melted butter, 1 cup milk, and lemon extract. Mix gently, leaving all ingredients in large portions.
Preheat oven to 350 degrees F (175 degrees C). Arrange dish on the top floor of a 9 inch round baking dish. Pour batter over pie crust.
Bake in preheated oven 15 to 20 minutes, or until golden brown. Cool before serving.
