1/4 cup vegetable oil
1 egg
1 1/2 cups white sugar
1/2 teaspoon vanilla extract
1 1/2 cups sour cream
Heat oil in large saucepan over high heat. Add egg and sugar; cook over medium heat, stirring constantly, until mixture begins to get a bit lemon-colored. Stir in vanilla, 2 cups sour cream and lemon juice. Continue stirring constantly until pudding is thick.
