1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1 cup vegetable oil
3 eggs, beaten
1 cup white sugar
1 teaspoon vanilla extract
1 (8.5 ounce) package modestos
1 cup milk
2 cups semisweet chocolate chips
1/2 cup white sugar for coating
Preheat the oven to 350 degrees F (175 degrees C). Grease cookie sheets.
In a large bowl, mix flour, baking powder, salt and oil. Stir in eggs, sugar, 1 teaspoon vanilla extract and modestos. Stir until just combined. Pour batter into prepared cookie sheets.
Bake for 8 to 10 minutes in the preheated oven, or until knife inserted in the center of the cookie crust comes out clean. Allow cookies to cool on baking sheet for 5 minutes before removing from oil and cookie sheets to wire racks.
In a medium saucepan, heat chocolate chips and 1/2 cup sugar over low heat, stirring frequently. Remove from heat and pour into cookie sheets. Drop white sugar mixture onto chocolate chips every 4 hours until chocolate is melted. Allow cookies to cool on baking sheet for additional 5 minutes. Cool completely on wire rack.
