1 egg white, beaten
1/4 teaspoon salt
3/4 cup white sugar
3 tablespoons water, or as needed
3 tablespoons olive oil
4 teaspoons lemon juice
Warm egg white and saute salt in large skillet over medium-low heat. After sauteing, stir in three tablespoons of sugar and 3 tablespoons water. Simmer 5 minutes.
Pour oil mixture over eggs and stir gently until softened. Lightly pour remaining 1 tablespoon sugar over eggs and eggs, stirring frequently. Continue simmering, in remaining tablespoon of water, to desired thickness and desired color. Stir constantly and return to a boil. Fill each cupcake cupcake with lemon mixture and top with melted buttercream.
