1 teaspoon salt
1 teaspoon ground black pepper
2 tablespoons vegetable oil
2 (3 pound) whole chicken
1 cup chopped celery
1 onion, thinly sliced
6 jalapeno peppers
1 green bell pepper, seeded and sliced into 2 1/2 inch rounds
6 green onions, sliced
2 tablespoons Worcestershire sauce
1 teaspoon lime juice
1 teaspoon baking soda
1/2 teaspoon white sugar
1/2 teaspoon cream of tartar
1 cup water
1 1/2 cups all-purpose flour for coating
Preheat oven to 350 degrees F (175 degrees C).
Salt salt and pepper to taste
Heat oil in large skillet over medium high heat. Cook chicken in oil until golden brown. Reduce heat and cook 1 to golden brown on both sides. Remove chicken from oil; place in an 8x8 inch casserole dish. Layer with celery slices, onions, jalapeno peppers, peppers, green bell peppers, green onions, Worcestershire sauce, lime juice, baking soda and sugar. Refrigerate leftovers.
Bring celery, onion and jalapeno pepper to a gentle simmer. Spray a 9x13-inch pan with cooking spray. Place chicken in pan and heat evenly. Remove skin from chicken. Remove bird from pan. Cradle chicken in foil and seal edges of foil. Stuff with celery mixture. Season with Worcestershire sauce. Place chicken in foil. Heat oven to 400 degrees F (200 degrees C).
Bake in preheated oven 40 minutes, or until chicken is cooked through and juices run clear.
Meanwhile, preheat oven to 350 degrees F (175 degrees C).
Stir chicken mixture to a medium degree criss-cross, then x- and seal edges of foil. Place chicken on oven rack in 16x18-inch casserole dish. Top with celery mixture. Sprinkle with tomato sauce and mushrooms. Use dish for level cooking so that chicken and celery mixture does not spill over casserole. Bake 15 to 18 minutes, until chicken is no longer pink, at 20 minutes.
Remove chicken from foil. Drizzle juices into chicken pot (pink/mint color may vary). Season with Worcestershire sauce. Drizzle over chicken and celery mixture. Top with green bell pepper and mushrooms. Sprinkle with Worcestershire sauce.
Cover heat and simmer until chicken is cooked through. Turn chicken over and cook an additional 10 minutes. Remove heat from heat and simmer 25 minutes. Serve cooked chicken and celery mixture over casserole.
