1 1/2 pounds apples - peeled and cored
1 onion, finely chopped
salt and pepper to taste
1 cup potato flour
4 cups water
3 eggs
2 tablespoons cornstarch
2 tablespoons canned water
Preheat oven to 350 degrees F (175 degrees C). Prepare a 2 quart baking dish with apple pulp.
In a large mixing bowl combine potatoes, flour, water, eggs and cornstarch. Pour in water until all ingredients are mostly used. Stir just to moisten all ingredients.
Divide apples into 1 quart casserole layers, sprinkle onions on top, top with potato and salt and pepper. Sprinkle top with 2 tablespoons cornstarch.
Bake in preheated oven for 1 hour, basting often. Cool 15 minutes. Cut into wedges and serve.
