1 pound ground pork
1 (14 ounce) can corn
1 onion, chopped
1/2 cup raisins
1/2 cup brown sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 cup water
1 pound potatoes, peeled, cubed
2 teaspoons vanilla extract
1/2 cup buttermilk
Preheat oven to 450 degrees F (230 degrees C). Lightly oil a 9x13 inch baking dish.
Mix ground pork into a large bowl; continue to stir until well cooked. In a small bowl combine corn, onion, raisins, and brown sugar; stir. Stir in cinnamon and salt and water. Bring to a boil, then reduce heat to medium and simmer, uncovered, for about 1 hour.
Return pork to bowl and stir in potatoes, vanilla extract, buttermilk and 1/2 cup water. Simmer, covered, for 20 minutes.
