Overnight Squares Recipe

Ingredients

1 pancake

1 egg, beaten

1 egg yolk

1 tablespoon vegetable oil

1 (12 ounce) package instant vanilla pudding mix

1 cup buttermilk

1/4 cup honey

1/4 cup cold water

1 cup vegetable oil for frying

1/4 cup packed light brown sugar

1/4 cup apple pie filling

Directions

Preheat oven to 350 degrees F (175 degrees C).

In a large bowl, beat egg, egg yolk, oil, vanilla pudding mix and buttermilk until smooth and well blended. Stir in honey, water and vegetable oil. Mix into the egg mixture, beating until well blended. Spread onto the bottom of a greased 9x13-inch pan.

Gently grease the prepared pan. Place 3 tablespoons of the filling mixture over the top of the bottom layer of pancakes (do not grease the edges).

Fry pancakes in the 10 inch or larger skillet. Fry for about 5 minutes on each side or until golden brown. Drain on paper towels. Serve hot or cold.
