2 tablespoons olive oil
1/8 cup minced onion
2 tablespoons garlic powder
1 teaspoon dried minced pepper
1 gram saltine cracker crumbs
2 tablespoons white sugar
1 (10 ounce) can sliced fresh melon, drained
Brown pepper beans in a skillet over medium heat until slightly charred. Drain in cola; set aside to cool.
In a small bowl, mix olive oil, minced onion, garlic powder, pepper and sugar. Mix thoroughly until well blended. Spoon mixture into pepper bean halves, placing 1 at a time on the bean halves. Place on the prepared baking sheet.
Bake in preheated oven for 35 minutes, or until tender.
