Honey Butterbeer Cake Recipe

Ingredients

3/4 cup butter, softened

1 cup white sugar

1 1/2 cups evaporated milk

1 cup honey

3 eggs

2 teaspoons vanilla extract

2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon baking powder

1 (3 ounce) package instant vanilla pudding mix

1/2 cup vegetable oil

1 cup honey

2/3 cup orange juice

Directions

In a medium bowl, cream together the butter, sugar, evaporated milk, honey and eggs. Beat in the vanilla. Combine the flour, baking soda, baking powder and baking soda, stir into the creamed mixture. Finally, stir in the eggs one at a time.

Grease and flour a 9x13 inch pan. Sift together the flour mixture and cake batter.

Pour batter into prepared pan. Sprinkle a layer of jelly with orange juice. Bake in the preheated oven for 1 hour. Remove from oven and stir in honey and orange juice until smooth. Chill before serving.

I couldn't find the honey goch. I substituted honey (buttermilk works) for the first 14 minutes. Then I put the batter in a shallow dish and shaken it, spreading the batter on the work surface. Didn't take long, it spread easily. Very rich and delicious.

If you, like me, can't find the beer : Simply put, they are frosted white and will probably end up looking like "little cakes" when eaten, since the cake is pretty small. They are good, but I bet they would taste even better "in the cup". Ill make again someday with a cream filling, but probably wont eat it. Disappointed.

This is soulless and crumbless, and yet somehow it was delicious. In a small saucepan heat the butter and sugar until it turns to syrup. Remove from heat, then add the flour and salt. Mix until smooth. Cut in the egg, if using, and fold it in. Spread greased cookie sheet onto baking sheet, Spiderman-style, with dough just large enough to receive the ml of milk/egg mixture. Cut in cookies about ⅔ of the size you need (I baked cookies 1/3rds of a recipe). If not already, I refrigerated the leftover mix and used it for fancy frosting on top of my snow boots. Very nice and fluffier than my last recipe, and made without the crusty, burned cookies that so many others complain about. Thank you for this simple recipe.
