3 Tbsp butter
2 cups white sugar
2 cups corn flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 egg
1/2 cup milk
1 1/2 cups whole wheat flour
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 cup butter
1/3 cup white sugar
2 (8 ounce) packages cream cheese, softened
1/3 cup packed light brown sugar
4 slices Cheddar cheese
Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9x5 inch loaf pans.
Blend together the butter, sugar, corn flour, baking powder, baking soda and salt. Beat in the egg, milk and whole wheat flour. Mix in the flour mixture by hand. Spoon batter into prepared pan.
Bake in preheated oven for 35 minutes. Reduce heat to 350 degrees F (175 degrees C) and continue baking for 15 minutes. Remove from oven and allow to cool completely.
In a large bowl, mix the cornbread mixture with the cream cheese and brown sugar. Spoon mixture into prepared loaf pans.
Bake in preheated oven for another 5 minutes, or until golden brown. Serve warm or cold.
