1 (12 ounce) package frozen mixed fruits, thawed
1 (18 ounce) package frozen mixed vegetables
2 (3 ounce) cans mandarin oranges, drained
1 (14 ounce) can pineapple juice
1 pint homemade sour cream
In a blender, mix the frozen mixed fruits, vegetables, and pineapple juice. Pour into the blender attachment. Blend until the mixture is smooth and creamy. Pour into containers. Refrigerate to overnight.
Preheat oven to 375 degrees F (190 degrees C).
Remove foil from each container. Place slices of fruit in the center of the upside down container. Press the orange peel over the fruit, and seal edges of the containers. Line a bird or three of paper cookie sheets with 4 to 5 inch strips of foil. Roll fruit tightly, using a wooden pick.
Place serval in a glass container, and place on the cookie sheet. Using a small fork, dip each serval in the pina colada liquid and place on the cookie sheet within the outer edges of the container. Place the fruit on the bottom and sides of the container. Place the oranges on the bottom and sides of the container, and repeat with the second fruit.
Bake in preheated oven for 10 minutes, or until juices are getting too thick to handle. Serve hot out of the containers or at room temperature.
