Pineapple Squares Recipe

Ingredients

2 tablespoons milk

1/2 cup confectioners' sugar

1/2 cup evaporated milk

1/2 cup chopped walnuts

3 large eggs

1/2 cup sour cream

1/2 cup confectioners' sugar

1/2 cup chopped walnuts

1/2 cup rolled oats

1/2 cup flaked coconut

3/4 cup raisins

3/4 cup sour cream

1/2 cup chopped walnuts

1/2 cup chopped pecans

1/2 cup butter, melted

1/2 cup white sugar

1/2 cup white vinegar

1/2 cup evaporated milk

1/2 cup heavy cream

Directions

To Make Dough: In a large bowl, mix together butter, 1 cup sugar and egg. Cut in flour until mixture resembles small crumbs. Stir in baking soda and salt. Stir in 1 cup of the crumbs, add chopped pecans. Divide dough into two pieces, wrap each piece in waxed paper and refrigerate overnight.

Preheat oven to 350 degrees F (175 degrees C).

To Make Filling: In a medium bowl, cream together sour cream and 1/2 cup sugar until smooth. Beat in vinegar and milk. Stir in the remaining crumbs and egg, mixing just until well blended. Gradually stir in the dry ingredients to form a ball; knead between sheets of waxed paper, on lightly floured surface.

Divide dough into two portions: Large portion will be used to make shortbread balls, and small portion will be used to make loaves of French bread. Roll one ball of dough into approximately 1/8-inch thick. Set aside.

Roll the other ball of dough and thinly slice each loaf into approximately 1 inch thick slices. Place a crepe or jellyroll on top of each slice, then coat slices with melted butter. Repeat with remaining bread pieces.

Bake in preheated oven for 30 to 35 minutes, until lightly browned. Let cool 10 minutes before serving.
