1 cup regular barley
1 cup white sugar
1/2 cup water
1 egg
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 tablespoon garlic powder
1 1/2 teaspoons active yeast
3 cups bread flour
Place barley in small bowl, pressing down gently until slightly moistened. Sprinkle sugar, water, egg and cinnamon over barley; place together to form a slurry.
Change bran coating: Bring a large pot of water to a boil. Add rye and stir to loosen. Drain and cool slightly. Add yeast mixture; stir just enough to get into a slightly sticky state.
Place yeast in a large bowl. Cover and let stand overnight. Meanwhile, mix together flour, salt, garlic powder and active yeast.
Stand out from the rest by creating a slightly translucent border with a spoon or fork.
When finished, add warm water to bran mixture to a little below the border. The border will spread out like rose petals when dry.
