2 teaspoons curry powder
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
3 tablespoons lime juice
2 teaspoons lime juice
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/2 cup dry lentils
1/2 cup dry white rice
1/2 cup water
1/2 cup dry bread crumbs
3 bay leaves
3 onions, chopped
1/2 teaspoon salt
1/2 teaspoon ground black pepper
3 tomatoes, diced
3 cloves garlic, peeled
2 teaspoons chili powder
1 teaspoon ground cumin
1/2 teaspoon ground coriander
Pour curry powder, cumin, olive, lime juice, lime juice, salt, pepper and tomatoes into a large skillet over medium heat until just slightly thickened.
Stir lentils and white rice in same skillet; add water until all ingredients are nearly covered. Add salt, and pepper to taste. Simmer 8-10 minutes, until lentils are done. Stir in bread crumbs and bay leaves. Pour into serving bowls.
