2 tablespoons vegetable oil
1 orange, peeled, sectioned, and chopped
2 cloves garlic, minced
1/2 teaspoon crushed garlic
1/2 teaspoon ground black pepper
1 teaspoon white wine vinegar
1/2 cup cardamom pods
1/2 cup fresh basil leaves
1/4 cup dried red chile peppers
1 (28 ounce) can chicken broth
1 (3 ounce) jar spaghetti, drained
1 (3 ounce) package pepperoni sausage, crushed mint leaves
12 ounces mozzarella cheese
1 cup grated Parmesan cheese
Heat oil in a large skillet over medium heat. Saute onion and garlic until tender. Toast in a small pan over medium-temperature until brown. Stir in ground black pepper and white wine vinegar. Gradually stir in cardamom pods. Add basil and red chile peppers, stirring well. Cook until chile and fresh basil are heated through. Stir in chicken broth and 1/2 cup of the liquid in the wine mixture. Return cooked mixture to skillet and stir in spaghetti, pepperoni and mushrooms. Reduce heat to medium-low.
Meanwhile, layer the mozzarella cheese layer over onion layer. Lay onion layer on top layer and spread sauce over that layer. Simmer 2 to 3 hours, stirring occasionally.
