3 cups plain nonfat yogurt
1 cup milk
1 tablespoon orange zest
1 teaspoon vanilla extract
2 eggs
1 cup water
salt to taste
Preheat waffle iron.In a medium saucepan over medium heat combine yogurt, milk, orange zest, and vanilla extract. Boil for 1 hour, until the mixture is thick enough to coat the back of a metal spoon.
Place two eggs in a medium saucepan and cover with cold water. Bring water to a boil and immediately remove from heat; return them to cold water. Mix yogurt mixture with hot milk and egg, gently whisk until smooth. Stir in salt to taste. Serve hot.
