Coconut Washes Recipe

3/4 cup water

2/3 cup white sugar

3/4 cup butter, softened

1 tablespoon water

1 egg

3 3/4 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1 1/2 cups rolled oats

3 tablespoons white sugar

1/3 cup brown sugar

1 (1 pound) sifted confectioners' sugar

Directions

Preheat oven to 375 degrees F (190 degrees C). Grease cookie sheets or line with waxed paper.

In a large bowl, cream together the water, sugar, and 2/3 cup butter over low heat until smooth. Stir in the 3/4 cup milk, eggs and 1/2 cup flour. Stir dough until well-blended. Divide dough into two parts and shape one into a long spool. let the dough rest in a warm cloth on the prepared cookie sheet for 3 hours.

Punch down into wet, flour-free loaf pan, 7 inches by 5 inches by 1/2 inch. Butter an 8-inch glass or metal bowl generously with oiled butter.

Spread evenly half of dough into pan and bake in preheated oven for 10 minutes, or until a knife inserted deep into the center comes out clean. Transfer to wire rack and cool completely. To make the Filled Mounds: in a medium bowl, cream together the butter and white sugar. Stir in the egg mixture and the remaining flour, one cup at a time, beating well after each addition. In a medium bowl, stir together the whole milk mixture and the vanilla. Stir in the cooled dough. Spread evenly into prepared pan, then frost with confectioners' sugar.
