Chicken and Spinach Fajita Casserole Recipe

Ingredients

1 (3 pound) whole chicken, cut into pieces

1 cup chopped cooked onion

2 cups water

1 (8 ounce) package cream cheese, softened

1 tablespoon lemon juice

1/2 teaspoon salt

1/2 teaspoon ground black pepper

2 teaspoons chili powder

1/2 teaspoon ground cayenne pepper, or to taste

1/2 cup shredded Cheddar cheese

1/2 cup salsa

1/4 cup water

1/2 cup chopped green onions

1/4 cup shredded Cheddar cheese

Directions

Preheat oven to 350 degrees F (175 degrees C).

Melt the cream cheese in a medium skillet over medium heat. Mix in the lemon juice, salt, pepper and chili powder. Stir until all the ingredients are thoroughly combined. Pour in the water and saute for about 5 minutes.

In a separate medium bowl, mix together the Cheddar cheese, salsa, water, green onions and Cheddar cheese. Transfer the mixture to a medium-size casserole dish.

Bake in the preheated oven for 25 minutes, or until the cheese is bubbly and the chicken is cooked through.

I didn't set vodka on sause, but it seemed a bit thin so didn't go good. Still haven't tried the binding powder, but are keeping that as a med/min`er.
