2/3 cup butter flavored shortening
1 cup white sugar
1 1/2 cups confectioners' sugar
1 1/4 cups all-purpose flour
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
1/4 cup milk
In a medium bowl, cream together the butter flavored shortening and white sugar until smooth. Add the confectioners' sugar and flour; mix well. In a small bowl, stir together. Fold in the milk and 1/2 teaspoon of vanilla until no streaks remain.
Shape dough into 1 inch balls and flatten slightly to prevent the cookies from sticking. Set aside.
In a large bowl, beat egg whites until soft peaks form. Gradually add the remaining vanilla, continuing to whip until whites wrap; dissolving lumps should be smaller than the cookies themselves. The cookies will stick to the sides of the bowl when first applied.
While still in the air, stir in the flour and 1 cup of sugar. Continue to whip until the dough pulls away from the sides of the bowl. Remove dough from the bowl and divide into two dough forms. Form the dough into round balls, sticking to the sides of the pan.
Remove the pan from the oven. Roll the balls in the "egg white" then sprinkle them with the remaining red sugar. Bake for 20 to 25 minutes in the preheated oven. Cool before removing from the cookies. Sprinkle with milk just before serving.
