2 cups uncooked long-grain white rice
1 pound ground ham, finely chopped, 8 ounces
4 hot water
salt to taste
8 green bell peppers, crumbled
3 tablespoons butter, melted
1 cup sliced black olives, quartered
4 tablespoons Italian seasoning
1/4 cup white wine
1/2 medium red onion, chopped
6 whole cloves
1 bay leaf
3 cups vinegar
3 tablespoons wine
1/2 teaspoon salt
1/2 teaspoon ground black pepper
Heat 1/2 cup water in a large saucepan over medium heat. Saute rice in water until tenderized. Remove rice from heat and set aside for 1 hour.
Boil Ham and Hot Water, and a little wine can be added if needed. Crumble ham, reserving 1 cup water, and pour over rice mixture. Return mixture to saucepan, reduce heat to low, and simmer for 20 minutes, stirring occasionally.
Meanwhile, Heat 1 tablespoon butter, 3 tablespoons vinegar, 2 tablespoons red wine, salt and pepper over a medium-low heat (through a window may also be helpful). Serve hot.
